Raw Honey vs Processed Honey: How to Tell the Difference
Walk into any supermarket in India and you will find a long row of honey jars. Some are clear and runny, some are thick and cloudy, and a few have set into a creamy solid. Prices range widely too. So what is the real difference between raw honey and the processed honey most of us grew up with? This guide explains it in simple terms, so you can shop with confidence.
What Is Raw Honey?
Raw honey is honey kept as close as possible to how it comes out of the hive. It is extracted from the comb, strained to remove bits of wax, and then packed. It is not heated to high temperatures and is not finely filtered, so it keeps its natural character: its aroma, its colour and its tendency to thicken or crystallise over time.
Because nectar changes with the season and the flowers nearby, raw honey can vary from batch to batch. One jar may be lighter, the next a little darker or stronger in flavour. That variation is normal and is part of what makes raw honey special.
What Is Processed Honey?
Most mass-market honey goes through extra steps before it reaches the shelf. These commonly include:
- Heating – honey is warmed so it flows easily through machines and stays liquid longer on the shelf.
- Fine filtration – honey is pushed through very fine filters to make it look crystal clear. This can also remove much of the natural pollen.
- Blending – honey from different sources may be mixed to give every jar the same colour and taste.
Heating and heavy filtering are generally understood to change some of honey's delicate natural qualities, such as its aroma and flavour. That is why many people who prefer natural food choose raw honey.
Raw Honey vs Processed Honey: Key Differences
1. Texture and Thickness
Raw honey usually feels thicker and may look slightly cloudy. Processed honey tends to be thinner, very smooth and glass-clear.
2. Crystallisation
Raw honey often crystallises (turns grainy or solid) within weeks or months, especially in cooler weather. Processed honey is often heated partly to slow this down. Crystallisation is a natural process and not, by itself, a sign of adulteration. We explain it fully in our guide Why Does Honey Crystallise? Is Crystallised Honey Pure?
3. Taste and Aroma
Raw honey carries the flavour of the flowers the bees visited, so it can taste floral, earthy or slightly spicy depending on the source. Processed honey usually tastes sweet but plain.
4. Colour Variation
Raw honey can change shade from one season to the next. A perfectly identical colour in every jar, year after year, often points to blending.
5. Tiny Natural Particles
You may sometimes notice a few tiny specks or a thin foamy layer on top of raw honey. These are usually natural traces of pollen or wax and trapped air bubbles, and are harmless.
What About Home Purity Tests?
You may have seen videos showing the "water test", the "thumb test" or the "flame test" for honey. These are popular, but they are not reliable. Thickness, moisture content and room temperature all affect the results, so pure honey can fail them and adulterated honey can sometimes pass. The only dependable way to check purity is a laboratory test.
A better approach is to look at the source: who produced the honey, how it was collected and how it was packed.
Our Raw & Unprocessed Multi-Flora Honey has been tested at Lilaba Analytical Laboratories, an NABL-accredited lab in Surat, for its nutrition values, moisture and sucrose. Moisture (17.1%) and sucrose (1.09%) are within the FSSAI honey standard limits (moisture not more than 20%, sucrose not more than 5%). This is a nutrition and composition test, not a full purity or adulteration test. If you would like a copy of the report, message us on WhatsApp or email us.
What to Check Before You Buy Raw Honey in India
- Read the label. Look for words like "raw" and "unprocessed", and check that the only ingredient listed is honey.
- Look for an FSSAI licence number. Packaged food sold in India should carry one. Ours: 10726997000003
- Ask about the source. Does the brand tell you where the honey comes from?
- Do not fear crystallisation. A jar that has started to set can be a sign that the honey has not been heavily heated, though it is not proof of purity.
- Be wary of very low prices. Raw honey takes time and care to collect, and the price usually reflects that.
How Ratanmaa Ayurveda Brings Raw Honey to You
At Ratanmaa Ayurveda, we place our own honey bee boxes across agricultural fields in Surendranagar and the Saurashtra region of Gujarat. We collect the honey only when it has naturally matured in the hive, and then pack it with care. Our honey is not factory-refined and has no added sugar or preservatives.
We currently offer two raw honeys:
- Raw & Unprocessed Multi-Flora Honey – an everyday honey from a variety of seasonal flowers. Available in 500 g (Rs. 599) and 1 kg (Rs. 1149).
- Raw & Unprocessed Ajwain Honey – a raw honey for those who would like to try something different from everyday multi-flora honey. Available in 500 g (Rs. 599) and 1 kg (Rs. 1149).
Simple Ways to Enjoy Raw Honey
In many Indian homes, honey is part of the morning routine. Here are a few easy ideas:
- Stir 1 teaspoon into a glass of lukewarm (not hot) water in the morning.
- Use it to sweeten herbal tea or kadha once it has cooled slightly.
- Drizzle it over fruit, curd, oats or toast.
- Use it in salad dressings and chutneys.
In Ayurveda, honey is traditionally not cooked or added to very hot liquids, so it is best enjoyed warm rather than boiling. Remember that honey is still a natural sugar, so enjoy it in moderation as part of a balanced diet.
The Bottom Line
Raw honey and processed honey can look similar on the shelf, but they are handled very differently. Raw honey is minimally handled, varies naturally with the seasons and often crystallises over time. Processed honey is usually heated and finely filtered for a uniform look. Skip the unreliable home tests, read the label, and choose a source you can trust.
